Ingredients
Scale
Dough
- 1 lb. homemade rough puff pastry or store-bought frozen & thawed puff pastry (2 sheets)
Filling
- 2 cups (240g) peeled & diced apples (about 2 medium apples)
- 1 teaspoon cornstarch
- 2 teaspoons pure vanilla extract
- 1 teaspoon ground cinnamon
- 1/2 cup (100g) granulated or brown sugar
Egg Wash + Topping
- 1 large egg
- 1 Tablespoon (15ml) milk (any kind)
- optional: 1/2 cup (145g) salted caramel, for drizzling
Instructions
- Prepare the Puff Pastry: If using homemade rough puff pastry, roll it out to about 1/8 inch thickness. If using store-bought frozen puff pastry, thaw it according to package instructions and unroll two sheets on a lightly floured surface.
- Make the Filling: In a mixing bowl, combine peeled and diced apples, cornstarch, vanilla extract, ground cinnamon, and sugar. Mix well until the apples are evenly coated and the ingredients are well incorporated.
- Cut the Pastry: Cut each sheet of puff pastry into 4 equal squares, creating 8 squares total. This will be the base for each turnover.
- Fill the Pastry: Place about 2-3 tablespoons of the apple filling in the center of each pastry square, leaving enough room around the edges to seal the turnovers properly.
- Seal the Turnovers: Fold each pastry square diagonally to form a triangle over the apple filling. Press down the edges firmly with your fingers or a fork to seal completely and prevent filling leakage.
- Prepare Egg Wash: In a small bowl, whisk together the large egg and milk until combined. Brush the egg wash over the top of each turnover for a shiny, golden finish after baking.
- Preheat the Oven: Preheat your oven to 400°F (200°C), ensuring it’s fully heated for even baking.
- Bake: Place the turnovers on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes or until the pastries are puffed up and golden brown.
- Cool and Serve: Allow the turnovers to cool on a wire rack for 10 minutes before serving. Optionally, drizzle with salted caramel sauce for an extra indulgent touch.
Notes
- Use tart apples such as Granny Smith for a balanced sweet-tart flavor.
- Ensure the edges are well sealed to prevent filling from leaking during baking.
- Can be made ahead and frozen before baking; bake straight from frozen adding a few extra minutes to the baking time.
- For a dairy-free egg wash, use a mixture of plant-based milk and maple syrup.
- Store leftover turnovers in an airtight container at room temperature for up to 2 days or refrigerate for up to 5 days.
