  • 2 cups (240g) peeled & diced apples (about 2 medium apples)
  • 1 teaspoon cornstarch
  • 2 teaspoons pure vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/2 cup (100g) granulated or brown sugar

Egg Wash + Topping

  • 1 large egg
  • 1 Tablespoon (15ml) milk (any kind)
  • optional: 1/2 cup (145g) salted caramel, for drizzling

Instructions

  1. Prepare the Puff Pastry: If using homemade rough puff pastry, roll it out to about 1/8 inch thickness. If using store-bought frozen puff pastry, thaw it according to package instructions and unroll two sheets on a lightly floured surface.
  2. Make the Filling: In a mixing bowl, combine peeled and diced apples, cornstarch, vanilla extract, ground cinnamon, and sugar. Mix well until the apples are evenly coated and the ingredients are well incorporated.
  3. Cut the Pastry: Cut each sheet of puff pastry into 4 equal squares, creating 8 squares total. This will be the base for each turnover.
  4. Fill the Pastry: Place about 2-3 tablespoons of the apple filling in the center of each pastry square, leaving enough room around the edges to seal the turnovers properly.
  5. Seal the Turnovers: Fold each pastry square diagonally to form a triangle over the apple filling. Press down the edges firmly with your fingers or a fork to seal completely and prevent filling leakage.
  6. Prepare Egg Wash: In a small bowl, whisk together the large egg and milk until combined. Brush the egg wash over the top of each turnover for a shiny, golden finish after baking.
