  • 1 cup plain flour
  • 1/2 cup vanilla-flavored protein powder
  • 3/4 cup thick greek yogurt
  • 1/2 cup extra-virgin olive oil
  • 2 tbsp honey
  • 1 large egg
  • 1 tsp baking powder
  • 1 tsp baking soda
  • 1 tsp pure vanilla extract

Instructions

  1. Preheat oven: Preheat the oven to 350°F (180°C) and line a muffin tin with paper liners.
  2. Mix dry ingredients: In a bowl, whisk together flour, protein powder, baking powder, and baking soda.
  3. Mix wet ingredients: In another bowl, mix yogurt, olive oil, honey, egg, and vanilla extract.
  4. Combine: Gently fold in the dry ingredients into the wet ingredients until just combined. Do not overmix.
  5. Add blueberries: Gently fold in the fresh blueberries.
  6. Bake: Divide the batter into the muffin tin and bake for about 20-25 minutes or until a toothpick inserted comes out clean.
