    • 1 cup very smooth creamy natural peanut butter, or cashew butter
    • ⅔ cup honey
    • 1 teaspoon vanilla extract
    • Heaping ½ teaspoon sea salt
    • 2½ cups whole rolled oats

Add-ins:

  • ⅓ cup mini chocolate chips
  • 3 tablespoons pepitas, or crushed peanuts or cashews

Instructions

  1. Mix Wet Ingredients: In a mixing bowl, combine peanut butter, honey, vanilla extract, and sea salt.
  2. Add Dry Ingredients: Stir in rolled oats until well combined. Fold in chocolate chips and pepitas or nuts.
  3. Press into Pan: Press mixture firmly into a lined baking dish.
  4. Chill and Cut: Chill in the refrigerator until firm, then cut into bars.
