  • ⅓ cup honey, maple syrup, or agave
  • 1 teaspoon vanilla extract (optional)
  • Pinch of salt

Instructions

  1. Prepare Your Pan: Line an 8×8-inch baking dish with parchment paper, leaving extra hanging over the edges to allow easy removal of the bars later.
  2. Mix Dry Ingredients: In a large bowl, combine the rolled oats with your choice of mix-ins such as chocolate chips, dried fruit, seeds, or nuts.
  3. Heat Wet Ingredients: In a small saucepan over low heat, gently melt the nut butter with honey (or maple syrup/agave), stirring frequently until smooth and completely combined. Remove from heat and stir in vanilla extract if using, along with a pinch of salt.
  4. Combine Wet and Dry Ingredients: Pour the melted nut butter and sweetener mixture over the oat mixture. Stir thoroughly to evenly coat all the oats and mix-ins with the wet ingredients.
  5. Press into the Pan: Transfer the combined mixture into the prepared baking dish. Using the back of a spoon or a spatula, press down firmly and evenly to compact the mixture tightly together.
