Ingredients
Scale
For the Chicken
- 1½ lbs boneless, skinless chicken thighs or breasts
- 1 tablespoon olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- ½ teaspoon onion powder
- ½ teaspoon cumin
- ½ teaspoon salt
- ¼ teaspoon black pepper
- 1 tablespoon lemon juice
For the Hot Honey Sauce
- ¼ cup honey
- 1–2 teaspoons chili flakes (adjust for spice level)
- 1 tablespoon apple cider vinegar or lemon juice
- 1 tablespoon olive oil or butter
- 1 garlic clove, minced
- Optional: pinch of cayenne for extra heat
For Finishing
- ½ cup crumbled feta cheese
- Fresh parsley or mint, chopped
- Lemon zest or a squeeze of lemon juice
- Optional: toasted sesame seeds or red pepper flakes
Instructions
- Season and Marinate: Place the chicken on a clean plate or bowl. Rub it with olive oil and lemon juice, then evenly coat with paprika, garlic powder, cumin, onion powder, salt, and black pepper. Let the chicken rest for 10 to 15 minutes to absorb the flavorful spices.
- Sear or Bake the Chicken: To cook on the stovetop, heat a skillet over medium-high heat and add a drizzle of oil. Sear the chicken for 5 to 6 minutes on each side until golden brown and cooked through. Alternatively, preheat the oven to 400°F (200°C). Place the seasoned chicken in a baking dish and roast for 20 to 25 minutes until fully cooked.
- Make the Hot Honey: While the chicken cooks, combine honey, chili flakes, minced garlic, apple cider vinegar or lemon juice, and olive oil (or butter) in a small saucepan. Warm over medium heat for 2 to 3 minutes until the sauce begins to bubble subtly. Stir in a pinch of cayenne pepper if you prefer extra heat.
- Finish and Garnish: Once the chicken is done, spoon the hot honey sauce generously over the pieces. Sprinkle crumbled feta cheese over the hot chicken so it softens slightly into the sauce. Garnish with chopped fresh parsley or mint, a dash of lemon zest or an extra squeeze of lemon juice, and optional toasted sesame seeds or red pepper flakes for added texture and flavor.
Notes
- This chicken pairs wonderfully with couscous, quinoa, or mashed sweet potatoes for a complete meal.
- For a vegetarian option, substitute the chicken with roasted cauliflower florets or thick slices of halloumi cheese.
- You can also slice the cooked chicken and serve it stuffed in warm pita bread with arugula and a yogurt sauce for a tasty sandwich.
