Description

Humpty Dumpty Dip is a creamy, flavorful egg-based dip perfect for parties or casual snacking. Made with hard-boiled eggs, mayonnaise, and a blend of spices including Dijon mustard and paprika, this dip is enriched with sharp cheddar cheese, crispy bacon, and fresh green onions, served best with crackers, chips, or toasted bread slices.

Ingredients

Scale

Main Ingredients

  • 8 large eggs
  • 1 cup mayonnaise
  • 2 teaspoons Dijon mustard
  • 1 teaspoon hot sauce (optional, adjust to taste)
  • 1 teaspoon paprika plus extra for garnish
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper to taste
  • 1 cup shredded sharp cheddar cheese
  • 4 slices cooked bacon, crumbled
  • 2 green onions, finely chopped

For Serving

  • Crackers, chips, or toasted bread slices

Instructions

  1. Boil the Eggs: Place the 8 large eggs in a saucepan and cover them with cold water. Bring the water to a boil over medium-high heat. Once boiling, reduce heat to low and simmer for 10 minutes. Remove the eggs and place them in ice water to cool completely.
  2. Peel and Mash Eggs: Once cooled, peel the eggs and place them in a mixing bowl. Mash them with a fork or potato masher until they reach a chunky consistency, suitable for a dip.
  3. Mix the Base: Add 1 cup mayonnaise, 2 teaspoons Dijon mustard, 1 teaspoon hot sauce (if using), 1 teaspoon paprika, 1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, salt, and black pepper to the mashed eggs. Stir everything together until well combined and creamy.
  4. Add Cheese and Bacon: Fold in 1 cup shredded sharp cheddar cheese, 4 slices of cooked, crumbled bacon, and 2 finely chopped green onions. Mix gently to incorporate all ingredients evenly.
  5. Chill the Dip: Cover the bowl with plastic wrap and refrigerate the dip for at least 1 hour. This allows the flavors to meld for a richer taste.
  6. Serve: Transfer the chilled dip to a serving bowl, sprinkle with a little extra paprika for garnish, and serve with crackers, chips, or toasted bread slices.

Notes

  • For extra creaminess, you can add a tablespoon of sour cream or cream cheese when mixing the base.
  • Feel free to adjust the hot sauce quantity depending on your preferred spice level.
  • Make sure eggs are fully cooled before peeling to prevent tearing the whites.
  • This dip can be made a day in advance and stored in the refrigerator.
  • Use smoked paprika for a slight smoky flavor variation.
