Ingredients
Scale
Filling
- 8 oz Feta Cheese (can substitute with goat cheese or ricotta)
- 2 tablespoon Fresh Dill (use fresh for best flavor)
- 2 tablespoon Fresh Mint (basil can be a substitute)
- 1 tablespoon Lemon Zest (from unwaxed lemons)
- Freshly ground Black Pepper to taste
Pastry & Oil
- 8 sheets Phyllo Pastry (keep covered with a damp cloth to prevent drying out)
- 4 tablespoon Olive Oil (for brushing between layers and on tops)
Chili Honey Glaze
- ½ cup Honey (use high-quality honey)
- 1 tablespoon Chili Flakes (adjust according to desired spice level)
- 1 teaspoon Lemon Juice
Instructions
- Preparation: Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper to prevent sticking and ensure easy cleanup.
- Make the Filling: In a mixing bowl, crumble the feta cheese. Add finely chopped fresh dill, mint, lemon zest, and freshly ground black pepper. Mix everything together until well combined.
- Prepare the Phyllo Pastry: Lay two sheets of phyllo pastry flat on a clean surface. Brush the top sheet generously with olive oil. Cut the layered phyllo into strips approximately 2 inches wide.
- Assemble the Rolls: Place about one tablespoon of the feta mixture at one end of each phyllo strip. Fold the edges over the filling and tightly roll the strip into a neat roll. Place each roll seam-side down on the prepared baking sheet.
- Brush and Bake: Brush the tops of the rolls with olive oil to ensure a golden, crispy crust. Bake in the preheated oven for 18-20 minutes, or until the rolls are puffed, golden brown, and crispy.
- Prepare the Chili Honey: While the rolls are baking, combine honey, chili flakes, and lemon juice in a small saucepan. Heat gently over low heat, stirring occasionally, until the mixture is warm and infused with spicy flavor. Do not boil.
- Serve: Remove rolls from the oven and allow to cool slightly. Drizzle the warm chili honey over the rolls just before serving to add a perfect balance of sweet heat.
Notes
- Serve the rolls fresh out of the oven for optimal crispness and flavor.
- These rolls can be frozen before baking; simply bake directly from frozen, adding a few extra minutes to the cooking time.
- Adjust the chili flakes in the honey glaze to your preferred spice level.
- Substitutions for feta include goat cheese or ricotta for a milder flavor.
- Keep phyllo pastry covered with a damp cloth at all times to prevent it from drying out and becoming brittle.
