Description
Japchae is a traditional Korean dish made with sweet potato noodles, vegetables, and your choice of protein, all stir-fried together in a flavorful sauce.
Ingredients

Protein:
- 2 lb thin-sliced beef (or sub with chicken, tofu, or shrimp)
Vegetables:
- 1 lb Korean sweet potato noodles (glass noodles)
- 3 medium carrots, julienned
- 1 large white onion, thinly sliced
- 1/2 bunch green onions, chopped
- 6 garlic cloves, minced
- 1/2 lb spinach leaves
Sauce:
- 4 tbsp sesame oil
- 1 tbsp olive oil
- 6 tbsp soy sauce (or tamari for gluten-free)
- 3 tbsp brown sugar
Instructions
- Prepare Ingredients: Slice beef (or protein of choice), julienne carrots, slice onion, chop green onions, mince garlic, and blanch spinach. Cook sweet potato noodles according to package instructions.
- Stir-Fry: In a large pan, heat sesame oil and olive oil. Cook protein until browned, then add vegetables and garlic. Stir in cooked noodles.
- Make Sauce: Mix soy sauce and brown sugar in a bowl until sugar dissolves. Pour over the stir-fry and toss to combine.
- Serve: Garnish with additional green onions and sesame seeds if desired. Enjoy hot or cold!
