Kashmiri Pink Chai, also known as Noon Tea, is a fragrant and flavorful tea infused with spices like star anise, cardamom, and cinnamon, giving it a unique taste. This traditional Kashmiri tea is perfect for a cozy afternoon pick-me-up.

Main Ingredients:
- 4 cups Water
- 2 tbsp Kashmiri/Himalayan green tea or other green tea
- 1/2 tsp Baking soda
- 1–2 Star anise
- 2 Cardamom pods crushed
- 1 Cinnamon stick
- 1/4 tsp Salt
- 2 cups Whole milk
- Sugar or honey to taste
- Crushed nuts (e.g. almonds) for garnish optional
Instructions
- Boil Water and Tea: In a saucepan, bring water to a boil, add green tea, baking soda, star anise, cardamom, cinnamon, and salt. Boil for a few minutes.
- Add Milk: Pour in the milk and simmer for another 5-7 minutes.
- Sweeten and Serve: Add sugar or honey to taste. Strain the tea into cups, garnish with crushed nuts if desired, and serve hot.
Notes
- You can adjust the sweetness level by adding more or less sugar depending on your preference.
- Feel free to experiment with different nuts for garnishing, like pistachios or cashews.
