- 1 egg
- 2 teaspoons vanilla extract

- ¼ teaspoon salt
- 1 teaspoon baking soda
- 2¾ cup all-purpose flour
- 1 cup chopped or crushed graham crackers
Instructions
- Prepare Lemon Cheesecake Filling: In a bowl, mix cream cheese, powdered sugar, lemon zest, and lemon juice until smooth. Set aside.
- Make Lemon Cookies: Cream butter, white sugar, and brown sugar. Add lemon zest, egg, vanilla, lemon juice, salt, and baking soda. Gradually mix in flour. Shape dough into balls, flatten, and fill with cheesecake mixture. Top with graham crackers.
