  • 1 clove garlic, grated

  • 1 tablespoon olive oil (or more as needed for cooking)

Instructions

  1. Cook the Sweet Potato: Poke the sweet potato a few times with a fork. Microwave it until very soft, about 5–7 minutes or until fork tender. Carefully cut it open and scoop out the soft flesh into a large mixing bowl.
  2. Mash with Lentils: Rinse the canned lentils thoroughly and drain well. Add them to the bowl with the sweet potato. Mash the lentils and sweet potato together using a fork until mostly smooth, leaving some small lumps for texture.
  3. Mix Everything Together: To the mashed mixture, add ½ cup all-purpose flour, 1 cup crumbled feta cheese, 1 large egg, finely chopped ½ red onion, grated clove of garlic, 1 teaspoon dried oregano, ½ teaspoon ground cumin, ½ teaspoon salt, and black pepper to taste. Mix thoroughly until the mixture thickens and is easy to scoop. If it’s too wet, gradually add a bit more flour.
  4. Cook the Patties: Heat 1 tablespoon of olive oil in a pan over medium heat. Scoop about 2 tablespoons of the mixture and gently flatten it into a patty shape. Cook each patty for 3–4 minutes on each side until golden brown and cooked through. Adjust the heat as necessary to avoid burning.
