For the Panna Cotta Base:
- 2 cups heavy cream
- 1 cup whole milk
- 0.5 cup granulated sugar
- 1 vanilla bean or 2 teaspoon pure extract
- 2.5 teaspoon unflavored gelatin
- 3 tablespoon cold water
- 1 pinch salt
For the Mango Layer:
- 2 ripe mangoes
- 2 tablespoon sugar
- 1 teaspoon lemon juice
- 1 teaspoon unflavored gelatin
- 2 tablespoon cold water
- Prepare Panna Cotta Base: Combine heavy cream, milk, sugar, vanilla, gelatin, and salt in a saucepan. Heat until sugar dissolves. Pour into molds and refrigerate to set.
- Make Mango Layer: Puree mangoes with sugar and lemon juice. Bloom gelatin in cold water, then mix into mango puree. Pour over set panna cotta base and refrigerate until firm.
