- ½ cup diced celery
- ½ cup diced onions

- 2 tablespoons tomato paste
- 6–8 cups chicken broth
- 6 oz pasta
- 1 cup heavy whipping cream
- ½–1 cup grated parmesan reggiano cheese
- 2 ½–3 cups fresh spinach
Instructions
- Season and cook chicken: In a large pot, heat olive oil over medium heat. Add diced chicken, season with 1 teaspoon Italian seasoning, salt, and pepper. Cook until chicken is browned.
- Add veggies and aromatics: Add carrots, celery, onions, sundried tomatoes, and garlic. Cook until vegetables are tender.
- Make the broth: Sprinkle flour over the veggies and stir. Add tomato paste and remaining Italian seasoning. Pour in chicken broth, bring to a simmer.
