Description

For the crust:

  • 2 1/2 cups all-purpose flour, plus more for rolling out dough
  • 1 1/2 Tablespoons minced fresh rosemary (optional)
  • 1 1/2 Tablespoons white sugar
  • 3/4 teaspoon salt
  • 1 cup (2 sticks) unsalted butter, cold and cubed
  • 5 to 6 Tablespoons ice water

For the filling:

  • 4 medium apples, peeled and diced small (about 3 cups)
  • 1/4 cup white sugar
  • 1/4 cup packed light brown sugar
  • 1 teaspoon ground cinnamon
  • 2 Tablespoons all-purpose flour
  • 1 large egg, whisked with 1 Tablespoon water
  • Sanding sugar (optional)

Instructions

  1. Make the crust: In a food processor, pulse flour, rosemary, sugar, and salt. Add butter and pulse until mixture resembles coarse crumbs. Add ice water, 1 tablespoon at a time, until dough comes together. Divide dough, wrap in plastic, and chill.
  2. Prepare the filling: Combine apples, sugars, cinnamon, and flour in a bowl.
  3. Assemble the pies: Roll out dough and cut into circles to fit muffin tin. Fill each crust with apple mixture. Top with another circle of dough, crimp edges, and brush with egg wash. Sprinkle with sanding sugar.
  4. Bake: Bake at 375°F for about 25-30 minutes, until crust is golden and filling is bubbly.
