Description

Main Ingredients:

  • 1 lb ground beef
  • 3 garlic cloves, minced
  • ½ yellow onion, chopped
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp dried basil
  • ½ tsp dried oregano
  • 1 tsp kosher salt + more to taste
  • fresh ground pepper, to taste

Soup Base:

  • 14 oz can crushed tomatoes
  • 32 oz chicken broth + more if needed
  • 1 c water
  • 2 tsp tomato paste

Additional Ingredients:

  • 6 oz lasagna noodles, broken into small pieces
  • 1 c frozen spinach
  • ¼ c cream
  • Ricotta cheese
  • 4 oz mozzarella cheese, sliced
  • Optional: parmesan cheese

Instructions

  1. Brown the Beef: In a large pot, cook the ground beef over medium heat until browned. Add garlic, onion, garlic powder, onion powder, basil, oregano, salt, and pepper. Cook until onion is soft.
  2. Make the Base: Stir in crushed tomatoes, chicken broth, water, and tomato paste. Bring to a boil.
  3. Add Noodles and Spinach: Add lasagna noodles and frozen spinach. Simmer until noodles are cooked.
  4. Finish the Soup: Stir in cream and adjust seasoning with salt and pepper. Serve topped with ricotta, mozzarella, and parmesan cheese.

Notes

  • You can customize this soup by adding your favorite lasagna ingredients like mushrooms, bell peppers, or Italian sausage.
