Main Ingredients:
- 1 lb ground beef
- 3 garlic cloves, minced
- ½ yellow onion, chopped
- ½ tsp garlic powder
- ½ tsp onion powder
- ¼ tsp dried basil
- ½ tsp dried oregano
- 1 tsp kosher salt + more to taste
- fresh ground pepper, to taste
Soup Base:
- 14 oz can crushed tomatoes
- 32 oz chicken broth + more if needed
- 1 c water
- 2 tsp tomato paste
Additional Ingredients:
- 6 oz lasagna noodles, broken into small pieces
- 1 c frozen spinach
- ¼ c cream
- Ricotta cheese
- 4 oz mozzarella cheese, sliced
- Optional: parmesan cheese
Instructions
- Brown the Beef: In a large pot, cook the ground beef over medium heat until browned. Add garlic, onion, garlic powder, onion powder, basil, oregano, salt, and pepper. Cook until onion is soft.
- Make the Base: Stir in crushed tomatoes, chicken broth, water, and tomato paste. Bring to a boil.
- Add Noodles and Spinach: Add lasagna noodles and frozen spinach. Simmer until noodles are cooked.
- Finish the Soup: Stir in cream and adjust seasoning with salt and pepper. Serve topped with ricotta, mozzarella, and parmesan cheese.

- You can customize this soup by adding your favorite lasagna ingredients like mushrooms, bell peppers, or Italian sausage.
