Chicken:

  • 2 pounds boneless chicken breasts or thighs
  • 1 cup buttermilk
  • 2 teaspoons kosher salt
  • 3 cups finely crushed corn flakes
  • 3 tablespoons whole wheat flour
  • 1 tablespoon chopped fresh thyme
  • extra virgin olive oil, for brushing

Hot Honey:

  • 6 tablespoons butter
  • 2 tablespoons honey
  • 23 teaspoons cayenne pepper
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • kosher salt

Instructions

  1. Marinate the chicken: In a bowl, mix buttermilk and salt. Add chicken and marinate for at least 1 hour.
  2. Coat the chicken: In a separate bowl, mix crushed corn flakes, flour, thyme, and salt. Dredge marinated chicken in the mixture.
  3. Bake: Place chicken on a baking sheet, brush with olive oil, and bake at 400°F for about 25-30 minutes.
  4. Make the hot honey: Melt butter, honey, cayenne, chili powder, paprika, garlic powder, and salt in a saucepan.
  5. Serve: Drizzle hot honey over the baked chicken before serving.

Notes

  • You can adjust the spice level of the hot honey by adding more or less cayenne pepper.
  • For extra crispy chicken, you can double coat the chicken before baking.
