Description

These Pistachio Kunafa Chocolate Cookies are a delightful fusion of Middle Eastern and Western flavors. A crispy kunafa pastry and pistachio spread filling is surrounded by a rich chocolate cookie dough, making for a unique and tasty treat.

For the Pistachio Kunafa Filling

  • 1 cup (90gm) kunafa pastry
  • 1 Tbsp butter or ghee, for roasting kunafa dough
  • 3/4 cup (200gm) pistachio spread
  • 2 Tbsp Tahini (optional)

For the Cookie Dough

  • 114gm unsalted butter
  • 1 teaspoon espresso/ instant coffee powder
  • 1 cup brown sugar, packed
  • 2 tsp vanilla extract
  • 1 egg, room temperature
  • 1/3 cup cocoa powder
  • 1 cup all purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1/2 cup milk or semi-sweet chocolate chunks

Instructions

  1. Prepare Pistachio Kunafa Filling: Roast kunafa pastry with butter until golden, mix with pistachio spread and tahini.
  2. Make Cookie Dough: Cream butter and sugar, add egg, vanilla, cocoa, flour, baking soda, salt, and chocolate chunks.
  3. Assemble and Bake: Form cookie dough balls, flatten, add pistachio filling, seal, and bake at 350°F for 10-12 minutes.

Notes

  • You can customize the filling by adding chopped nuts or different spreads.
  • Adjust sweetness by adding more or less sugar based on preference.
