Cream Cheese Layer

  • 8 ounces (225g) full-fat cream cheese, room temperature
  • ¼ cup (50g) granulated sugar
  • 1 large egg
  • ½ teaspoon pure vanilla extract

Instructions

  1. Prepare the Brownie Batter: In a medium bowl, combine the melted butter, unsweetened cocoa powder, and salt. Mix until smooth and well incorporated. Add the sugar and stir until evenly combined. Incorporate the eggs one at a time, beating well after each addition. Stir in the vanilla extract and vinegar, if using, then add the red food coloring and mix until the batter is uniformly red. Finally, gently fold in the all-purpose flour until just combined, taking care not to overmix.
  2. Make the Cream Cheese Layer: In a separate bowl, beat the room temperature cream cheese until smooth and creamy. Add granulated sugar, egg, and vanilla extract, and continue to beat until the mixture is well combined and smooth, with no lumps.
