- 6 medium carrots, peeled and shredded
- 1 large apple, grated or julienned

- 2 tbsp lemon juice
- 1 tbsp chopped parsley
- Salt and pepper to taste
Instructions
- Prepare the Vegetables: Peel and shred the carrots. Grate or julienne the apple ensuring it is cut into thin, even pieces. Dice the celery if using.
- Make the Dressing: In a medium bowl, combine the plain yogurt, honey or maple syrup, lemon juice, chopped parsley, and a pinch of salt and pepper. Stir well until smooth and creamy.
- Combine Salad: Add the shredded carrots, grated apple, and diced celery into the bowl with the dressing. Toss everything together gently so that the fruits and vegetables are well coated with the dressing.
- Adjust Seasoning: Taste the salad and adjust salt, pepper, or honey as needed for balance between sweetness and tanginess.
- Chill and Serve: For best flavor, chill the salad in the refrigerator for at least 30 minutes before serving. This allows the flavors to meld and the salad to become crisp and refreshing.

- You can substitute the plain yogurt with Greek yogurt for a thicker and protein-rich dressing.
