Description

This fun and colorful Rice Krispie Easter Eggs recipe is a delightful twist on the classic treat, perfect for spring celebrations and Easter gatherings. Made with Kellogg’s Rice Krispies Cereal, melted marshmallows, butter, and vibrant Wilton Color Right food coloring, these eggs are easy to shape by hand and offer a sweet, chewy texture that everyone will love.

Ingredients

Scale

Base Ingredients

  • 15 cups Kellogg’s Rice Krispies Cereal
  • 15 tablespoons Salted Sweet Cream Butter
  • 15 cups Mini Marshmallows

Coloring

  • Wilton Color Right Food Coloring (assorted colors as desired)

Instructions

  1. Melt Butter: In a medium pan, melt 3 tablespoons of butter over medium heat until fully melted and slightly bubbling.
  2. Add Marshmallows: Add 3 cups of mini marshmallows to the melted butter and stir continuously until the marshmallows are completely melted and the mixture is smooth.
  3. Remove from Heat: Take the pan off the heat to prevent the marshmallows from burning and to allow safe stirring of the coloring.
  4. Add Food Coloring: Add the desired Wilton food coloring to the melted marshmallow mixture and mix thoroughly until the color is evenly distributed.
  5. Mix in Rice Krispies: Add 3 cups of Kellogg’s Rice Krispies Cereal to the colored marshmallow mixture and stir until every cereal piece is completely coated with the marshmallow.
  6. Cool Slightly: Allow the mixture to cool for a few minutes so it can be handled safely without sticking excessively to your hands.
  7. Shape Easter Eggs: Using your hands, grab handfuls of the mixture and form them into egg shapes, pressing to compact and shape neatly.
  8. Let Set: Place the shaped Rice Krispie eggs on wax paper or a non-stick surface and allow them to cool completely to set their shape.
  9. Repeat for Remaining Colors: Repeat the above steps for the remaining 4 colors using 3 tablespoons butter, 3 cups marshmallows, and 3 cups Rice Krispies per color batch until all the ingredients are used and eggs are formed in all desired colors.

Notes

  • Use wax paper or parchment paper to prevent sticking when shaping and cooling the eggs.
  • Greasing your hands lightly with butter or cooking spray can help prevent sticking while forming the eggs.
  • You can mix multiple colors or add sprinkles or edible glitter for extra festive appeal.
  • Store the Rice Krispie Easter Eggs in an airtight container at room temperature for up to 3 days to keep them fresh.
  • For a firmer texture, refrigerate the eggs after shaping until fully set.
