  • 1 tablespoon kosher salt, or more to taste
  • 1 tablespoon oregano
  • 1 teaspoon smoked paprika
  • 1 cup vegetable broth, or use chicken stock
  • ¼ cup heavy cream, more for serving
  • ½ cup fresh basil, loosely packed plus more for serving

Instructions

  1. Preheat Oven: Preheat the oven to 400°F (200°C).
  2. Prepare Ingredients: Toss tomatoes, onion, and garlic with olive oil, salt, oregano, and smoked paprika on a baking sheet.
  3. Roast: Roast in the oven for about 30-40 minutes until vegetables are caramelized.
  4. Blend: Transfer the roasted vegetables to a blender, add vegetable broth, basil, and blend until smooth.
  5. Simmer: Pour the mixture into a pot, add cream, and simmer for a few minutes.
