Instructions

  1. Prepare the Brownie Batter: In a medium mixing bowl, combine the brownie mix, 2 large eggs, ½ cup vegetable oil, and ¼ cup water. Mix thoroughly until the batter is smooth and well incorporated.
  2. Bake the Brownies: Preheat your oven to 350°F (175°C). Spray a mini muffin tin with non-stick spray or line with mini cupcake liners. Pour the brownie batter evenly into the mini muffin cups, filling each about two-thirds full. Bake for 15-18 minutes until a toothpick inserted comes out with moist crumbs. Let cool completely before removing from the tin.
  3. Prepare the Vanilla Cream: In a chilled mixing bowl, whip 1 cup heavy cream with 1 box instant vanilla pudding mix until stiff peaks form, creating a fluffy, stabilized cream topping.
  4. Assemble the Santa Hats: Wash and hull the strawberries, then slice off the green leafy tops and cut each strawberry in half vertically. Place one brownie bite on a serving plate, pipe or spoon a generous amount of the vanilla cream on top to resemble the white furry band of Santa’s hat. Top each cream layer with a strawberry half, point facing upward, to form the red triangular hat. Finish by adding a small dollop of cream on the tip of the strawberry to mimic the white pom-pom.
