Sausage and Vegetables

  • 1 tablespoon olive oil
  • 1 pound ground Italian sausage (mild or spicy, casings removed)
  • 2 (10-ounce) packages frozen veggies (including potatoes, red bell peppers, sweet corn, broccoli, and carrots)
  • 1 1/2 cups frozen kale

Seasonings

  • 1 teaspoon dried basil
  • 1 teaspoon dried thyme
  • 1 teaspoon dried oregano
  • 1 teaspoon paprika
  • 1/2 teaspoon onion powder
  • 1/2 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon minced garlic

For Serving

  • Freshly grated Parmesan cheese

Instructions

  1. Thaw the Vegetables: Heat both packages of frozen veggies in the microwave for 2 minutes to begin thawing. Let them sit while you prepare the sausage. Open the packages and chop any large broccoli or potato pieces into bite-sized chunks, then set aside.
  2. Cook the Sausage: Heat olive oil in a large cast-iron skillet over medium-high heat. Add the ground Italian sausage, searing first, then crumble it as it browns. Cook the sausage through completely. Season with salt and pepper during cooking.
  3. Drain Excess Grease and Add Veggies: Once the sausage is browned, carefully drain off excess grease, leaving about 1 tablespoon in the pan for flavor. Add the thawed veggies to the skillet and cook for 3–5 minutes until heated through.
  4. Add Kale and Seasonings: Stir in the frozen kale, dried basil, thyme, oregano, paprika, onion powder, garlic powder, and minced garlic. Cook for another 2–3 minutes until the mixture is fragrant and the kale is warmed through.
  5. Serve: Remove the skillet from heat. Plate the sausage and vegetable mixture, and generously top with freshly grated Parmesan cheese. Serve immediately and enjoy your wholesome skillet meal.

Notes

  • Any package size close to 1 pound of Italian sausage works; a larger package will just make the dish meatier. Remember to remove the casings before cooking.
  • The preferred veggie blend includes potatoes, red bell peppers, sweet corn, broccoli, and carrots. Chop broccoli pieces if too large to bite-sized.
  • Using finely grated Parmesan cheese (freshly grated from a block) adds a salty flavor and melts nicely into the hot skillet mixture.
