Description

  • 160 g basmati rice
  • 250 g tomato passata (or strained tomatoes)
  • 100 g peas
  • 2 bell peppers
  • 450 ml vegetable broth
  • 350 g chicken breast fillet
  • 2 garlic cloves
  • 1 onion

Spices:

  • 2 tsp salt
  • 1 tsp sweet paprika
  • 1/2 tsp cayenne pepper or hot paprika

Instructions

  1. Prepare Ingredients: Chop the onion, bell peppers, and chicken breast. Mince the garlic cloves.
  2. Cook Chicken: In a large pot, sauté the chicken until browned. Add onions and garlic, cook until softened.
  3. Add Rice and Spices: Stir in rice, tomato passata, vegetable broth, salt, paprika, and cayenne pepper. Bring to a boil.
  4. Simmer: Reduce heat, cover, and simmer for about 15 minutes.
  5. Add Vegetables: Stir in peas and bell peppers. Cook for another 5-7 minutes until rice is tender.
  6. Serve: Garnish with fresh herbs and enjoy hot.
