Main Ingredients:
- 8 corn tortillas
- Neutral oil
- 1/2 yellow onion, sliced
- 1 poblano pepper, seeded and sliced
- 2 jalapeños, thinly sliced
- 1 – 28 oz can whole peeled tomatoes
- 1 tablespoon ancho chili powder
- 2 teaspoons ground cumin
- 1 teaspoon garlic powder
- 1/2 teaspoon dried oregano
- 1 teaspoon kosher salt
- 1 – 15 oz can pinto beans, drained and rinsed
- 4 eggs
Toppings:
- 1 avocado, sliced
- 2 oz cotija cheese, crumbled
- 1/2 cup fresh cilantro leaves
- 4–5 radishes, thinly sliced
- 2 limes, cut into wedges
Instructions
- Prepare the Sauce: In a skillet, heat oil and sauté onion, poblano pepper, and jalapeños. Add tomatoes and spices, then simmer. Stir in pinto beans.
- Cook the Eggs: Make wells in the sauce and crack eggs into them. Cover and cook until eggs are set.
- Serve: Top tortillas with sauce, eggs, avocado, cotija cheese, cilantro, radishes, and lime wedges.
Notes
- You can customize the spice level by adjusting the amount of jalapeños used.
- Feel free to add additional toppings such as sour cream or salsa.
