Main Ingredients:
- 2 lbs beef chuck, cut into 1-inch cubes
- 1 cup red wine (Burgundy or Pinot Noir)
- 2 cups beef broth
- 1 medium onion, chopped
- 4 cloves garlic, minced

- 2 cups carrots, sliced
- 2 cups mushrooms, quartered
- 2 tbsp tomato paste
- 1 tsp dried thyme
- 1 bay leaf
- Salt and pepper, to taste
- 2 tbsp olive oil
- Fresh parsley, for garnish
Instructions
- Prepare the Ingredients: Cut the beef into cubes, chop the onion, mince the garlic, slice the carrots, and quarter the mushrooms.
- Brown the Beef: In a skillet, heat olive oil over medium-high heat. Brown the beef cubes on all sides, then transfer to the slow cooker.
- Combine Ingredients: Add the red wine, beef broth, onion, garlic, carrots, mushrooms, tomato paste, thyme, bay leaf, salt, and pepper to the slow cooker. Stir to combine.
- Cook: Cover and cook on low for 6-8 hours, or until the beef is tender.
- Serve: Discard the bay leaf, garnish with parsley, and serve hot. Enjoy!
Notes
- You can serve this Beef Bourguignon over mashed potatoes, rice, or with crusty bread for a complete meal.
- For a thicker sauce, mix 2 tbsp of cornstarch with 2 tbsp of cold water and stir into the slow cooker during the last hour of cooking.
