Description

This Slow Cooker Beef Bourguignon is a classic French dish made with tender beef, red wine, and aromatic vegetables, all cooked to perfection in a slow cooker. It’s a comforting and hearty meal that’s perfect for cozy nights in.

Main Ingredients:

  • 2 lbs beef chuck, cut into 1-inch cubes
  • 1 cup red wine (Burgundy or Pinot Noir)
  • 2 cups beef broth
  • 1 medium onion, chopped
  • 4 cloves garlic, minced

Additional Ingredients:

  • 2 cups carrots, sliced
  • 2 cups mushrooms, quartered
  • 2 tbsp tomato paste
  • 1 tsp dried thyme
  • 1 bay leaf
  • Salt and pepper, to taste
  • 2 tbsp olive oil
  • Fresh parsley, for garnish

Instructions

  1. Prepare the Ingredients: Cut the beef into cubes, chop the onion, mince the garlic, slice the carrots, and quarter the mushrooms.
  2. Brown the Beef: In a skillet, heat olive oil over medium-high heat. Brown the beef cubes on all sides, then transfer to the slow cooker.
  3. Combine Ingredients: Add the red wine, beef broth, onion, garlic, carrots, mushrooms, tomato paste, thyme, bay leaf, salt, and pepper to the slow cooker. Stir to combine.
  4. Cook: Cover and cook on low for 6-8 hours, or until the beef is tender.
  5. Serve: Discard the bay leaf, garnish with parsley, and serve hot. Enjoy!

Notes

  • You can serve this Beef Bourguignon over mashed potatoes, rice, or with crusty bread for a complete meal.
  • For a thicker sauce, mix 2 tbsp of cornstarch with 2 tbsp of cold water and stir into the slow cooker during the last hour of cooking.
