  • 1 ½ tablespoons tomato paste
  • 2 teaspoons fresh thyme leaves – or ¾ teaspoon dried
  • ½ teaspoon fresh rosemary, minced – or ¼ teaspoon dried
  • 3 medium red potatoes, quartered – or baby red potatoes
  • 3 bay leaves – dried or fresh
  • 5 cups chicken broth, divided – plus more as needed
  • ⅓ cup all-purpose flour
  • 1 cup frozen peas
  • ¼ cup finely chopped Italian parsley

Instructions

  1. Season and Sear Chicken: Season chicken thighs with salt and pepper. In a skillet, heat olive oil over medium-high heat and sear chicken until browned on both sides. Transfer to slow cooker.
  2. Prepare Vegetables and Broth: In the same skillet, sauté onions, garlic, carrots, and tomato paste until softened. Add thyme, rosemary, potatoes, bay leaves, and 4 cups of chicken broth. Bring to a simmer.
  3. Combine Ingredients: Pour vegetable mixture over chicken in the slow cooker. Cover and cook on low for 4-6 hours until chicken is tender.
  4. Thicken Stew: In a small bowl, mix flour with remaining cup of broth until smooth. Stir into the slow cooker and cook on high for 30 minutes to thicken.
  5. Finish and Serve: Add frozen peas and parsley to the stew. Cook for an additional 10 minutes. Discard bay leaves before serving.
