Description

These soft and chewy lemon cookies are bursting with citrus flavor and are perfect for any occasion. They are easy to make and will quickly become a favorite treat for lemon lovers!

  • 12 tbsp unsalted butter, softened
  • 1 ½ cups granulated sugar
  • 1 tbsp. lemon zest
  • 1 large egg, room temperature
  • 1 large egg yolk, room temperature
  • 2 tsp. lemon extract (or 1 tsp. each lemon and vanilla extract)
  • 3 cups all-purpose flour, spooned and leveled
  • 1 tsp. baking soda
  • 1 tsp. cornstarch
  • 3/4 tsp. salt
  • 2 tbsp. lemon juice
  • ¼ cup granulated sugar, for rolling & garnishing

Instructions

  1. Creaming: In a large bowl, cream together butter, sugar, and lemon zest until light and fluffy.
  2. Add eggs: Beat in the egg, egg yolk, and lemon extract until well combined.
  3. Dry ingredients: In a separate bowl, whisk together flour, baking soda, cornstarch, and salt. Gradually add this mixture to the wet ingredients, mixing until just combined.
  4. Chill and roll: Cover the dough and chill for at least 1 hour. Preheat oven to 350°F. Shape dough into balls, roll in sugar, and place on a baking sheet.
  5. Bake: Bake for 10-12 minutes or until edges are set but centers are still soft. Let cool before serving.

Notes

  • You can add a drizzle of lemon glaze or sprinkle powdered sugar on top for extra sweetness.
  • For a stronger lemon flavor, increase the amount of lemon zest and lemon extract.
