Main Ingredients:
- 2 tbsp extra virgin olive oil
- 20 oz canned white beans
- 4 cage-free organic eggs
- 4 cloves garlic
- 1/2 onion
- 15 oz can diced tomatoes
Seasonings:
- 1 tsp sweet smoked Spanish paprika
- 1 tbsp freshly chopped parsley
- 2 tbsp freshly chopped chives
- Sea salt
- Black pepper
Instructions
- Prep Ingredients: Rinse and drain the white beans. Chop the garlic, onion, parsley, and chives.
- Cook Vegetables: In a skillet, heat olive oil and sauté garlic and onion until translucent.
- Add Beans & Tomatoes: Stir in white beans, diced tomatoes, paprika, salt, and pepper. Simmer for 10 minutes.
- Add Eggs: Make wells in the bean mixture and crack eggs into them. Cover and cook until eggs are set.
- Serve: Sprinkle with parsley and chives before serving.
Notes
- You can customize this dish by adding bell peppers, spinach, or chorizo.
- For a spicier kick, add a pinch of cayenne pepper or red pepper flakes.
