Description

Main Ingredients:

  • 2 tbsp extra virgin olive oil
  • 20 oz canned white beans
  • 4 cage-free organic eggs
  • 4 cloves garlic
  • 1/2 onion
  • 15 oz can diced tomatoes

Seasonings:

  • 1 tsp sweet smoked Spanish paprika
  • 1 tbsp freshly chopped parsley
  • 2 tbsp freshly chopped chives
  • Sea salt
  • Black pepper

Instructions

  1. Prep Ingredients: Rinse and drain the white beans. Chop the garlic, onion, parsley, and chives.
  2. Cook Vegetables: In a skillet, heat olive oil and sauté garlic and onion until translucent.
  3. Add Beans & Tomatoes: Stir in white beans, diced tomatoes, paprika, salt, and pepper. Simmer for 10 minutes.
  4. Add Eggs: Make wells in the bean mixture and crack eggs into them. Cover and cook until eggs are set.
  5. Serve: Sprinkle with parsley and chives before serving.

Notes

  • You can customize this dish by adding bell peppers, spinach, or chorizo.
  • For a spicier kick, add a pinch of cayenne pepper or red pepper flakes.
