Puff Pastry Basket

  • 2 puff pastry sheets (thawed)
  • 1 egg (beaten, for egg wash)

Spiced Potato Filling

  • 1 small yellow onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 tsp grated ginger
  • 1 potato (cut into small cubes)
  • 1/2 cup frozen peas (thawed)
  • 1/2 tsp turmeric powder
  • 1/2 tsp cumin powder
  • 1/2 tsp garam masala
  • pinch salt and pepper (to taste)
  • 2 tsps mustard seeds

Optional Garnish

  • Fresh parsley (chopped)

Instructions

  1. Prepare the filling: Heat a pan over medium heat and add the mustard seeds. Once they start to pop, add finely chopped onion, minced garlic, and grated ginger. Sauté until the onion is translucent and fragrant.
  2. Cook the potatoes: Add the cubed potatoes to the pan and stir well. Sprinkle turmeric powder, cumin powder, garam masala, salt, and pepper over the potatoes. Mix thoroughly to coat the potatoes in the spices. Cover and cook until potatoes are tender, stirring occasionally to prevent sticking. Add the thawed peas towards the end and cook for another few minutes until peas are heated through.
  3. Preheat the oven: Set the oven to 400°F (200°C) to allow it to preheat while you prepare the pastry baskets.
  4. Prepare the puff pastry: Unfold the thawed puff pastry sheets on a clean surface. Cut each sheet into 4 equal squares, giving a total of 8 squares.
  5. Form the baskets: Lightly brush the edges of each pastry square with the beaten egg. Fold up the edges slightly to create a shallow basket shape, pinching the corners for sturdiness.
  6. Fill the baskets: Spoon the spiced potato and pea mixture evenly into each puff pastry basket.
  7. Apply egg wash: Brush the outer edges and exposed pastry surfaces with beaten egg to give a golden finish when baked.
