- 6 slices Bacon, chopped
- 1 small Onion, finely diced
- 4–5 pieces Fresh jalapeños, diced (seeds removed for less heat)
- 3 cloves Garlic, minced
- 4 cups Chicken broth
- 1 8 oz Cream cheese, softened and cubed
- 1 cup Heavy cream
- 2 cups Shredded cheddar cheese
- 1/2 teaspoon Smoked paprika
- Salt and pepper, to taste
- 2 tablespoons Fresh chives or green onions (for garnish)
For the Grilled Cheese Dippers:
- 8 slices Bread (sourdough or your favorite)
- 2 cups Shredded cheddar or a cheese blend
- 4 tablespoons Butter, softened
Instructions
- Cook Bacon: In a large pot, cook the chopped bacon until crisp. Remove and set aside.
- Sauté Aromatics: In the same pot, sauté onions, jalapeños, and garlic until softened.
- Add Broth and Cream: Pour in chicken broth and add cream cheese, heavy cream, cheddar cheese, and smoked paprika. Stir until cheese is melted.
- Simmer: Let the soup simmer for 10-15 minutes. Season with salt and pepper.
- Prepare Grilled Cheese Dippers: Spread butter on bread slices, sprinkle with cheese, and grill until golden and cheese is melted.
- Serve: Ladle the soup into bowls, top with bacon, chives, and serve with grilled cheese dippers.
Notes
- To reduce spiciness, remove the jalapeño seeds and membranes. For extra heat, leave them in.
- Adjust the amount of jalapeños based on your spice preference.
