  • 1 8 oz Cream cheese, softened and cubed
  • 1 cup Heavy cream
  • 2 cups Shredded cheddar cheese
  • 1/2 teaspoon Smoked paprika
  • Salt and pepper, to taste
  • 2 tablespoons Fresh chives or green onions (for garnish)

For the Grilled Cheese Dippers:

  • 8 slices Bread (sourdough or your favorite)
  • 2 cups Shredded cheddar or a cheese blend
  • 4 tablespoons Butter, softened

Instructions

  1. Cook Bacon: In a large pot, cook the chopped bacon until crisp. Remove and set aside.
  2. Sauté Aromatics: In the same pot, sauté onions, jalapeños, and garlic until softened.
  3. Add Broth and Cream: Pour in chicken broth and add cream cheese, heavy cream, cheddar cheese, and smoked paprika. Stir until cheese is melted.
  4. Simmer: Let the soup simmer for 10-15 minutes. Season with salt and pepper.
  5. Prepare Grilled Cheese Dippers: Spread butter on bread slices, sprinkle with cheese, and grill until golden and cheese is melted.
  6. Serve: Ladle the soup into bowls, top with bacon, chives, and serve with grilled cheese dippers.

Notes

  • To reduce spiciness, remove the jalapeño seeds and membranes. For extra heat, leave them in.
