- 8 oz pasta (penne, fettuccine, or your favorite)
- 1 tablespoon olive oil or butter
- 8 oz mushrooms, sliced (baby bella or white)
- 3–4 cups fresh spinach
- 3 cloves garlic, minced
- ½ teaspoon salt
- ¼ teaspoon black pepper
- ½ cup heavy cream or half-and-half
- ¼ cup grated Parmesan cheese (plus extra for topping)
- ½ cup reserved pasta water (as needed)
Instructions
- Cook Pasta: Boil pasta according to package instructions. Drain and set aside.
- Sauté Mushrooms: In a large skillet, heat olive oil and sauté mushrooms until golden brown. Add garlic, salt, and pepper.
- Add Spinach and Cream: Stir in spinach until wilted, then pour in cream and Parmesan. Simmer until sauce thickens.
- Combine Pasta: Toss cooked pasta in the sauce, adding reserved pasta water as needed to loosen. Serve topped with extra Parmesan.
Notes
- This recipe can be easily customized with additional veggies or protein like chicken or shrimp.
- For a lighter version, use milk instead of cream and reduce the amount of cheese.
