Description

This Spinach Mushroom Pasta is a creamy and flavorful dish that combines tender pasta with sautéed mushrooms, fresh spinach, and a rich Parmesan cream sauce.

  • 1 tablespoon olive oil or butter
  • 8 oz mushrooms, sliced (baby bella or white)
  • 34 cups fresh spinach
  • 3 cloves garlic, minced
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ½ cup heavy cream or half-and-half
  • ¼ cup grated Parmesan cheese (plus extra for topping)
  • ½ cup reserved pasta water (as needed)

Instructions

  1. Cook Pasta: Boil pasta according to package instructions. Drain and set aside.
  2. Sauté Mushrooms: In a large skillet, heat olive oil and sauté mushrooms until golden brown. Add garlic, salt, and pepper.
  3. Add Spinach and Cream: Stir in spinach until wilted, then pour in cream and Parmesan. Simmer until sauce thickens.
  4. Combine Pasta: Toss cooked pasta in the sauce, adding reserved pasta water as needed to loosen. Serve topped with extra Parmesan.

Notes
