- 1 Tablespoon sour cream
- ⅛ teaspoon vanilla extract
- ½ cup strawberry jam or strawberry sauce
Cookies
- 1 cup (226 g) unsalted butter, softened
- 1 cup (200 g) light brown sugar, firmly packed
- ½ cup (100 g) granulated sugar
- 2 large eggs, room temperature preferred
- 1 teaspoon vanilla extract
- 3 ⅓ cups (410 g) all-purpose flour
- 1 cup (112 g) graham cracker crumbs
- 2 Tablespoons (18 g) cornstarch
- 2 teaspoons baking powder
- ¼ teaspoon baking soda
- ½ teaspoon salt
- 3 oz (85 g) white chocolate bar, optional
Instructions
- Make the Filling: In a bowl, mix cream cheese, sugar, sour cream, and vanilla until smooth. Fold in strawberry jam. Chill.
- Make the Cookies: Cream butter and sugars. Add eggs and vanilla. Mix in flour, graham cracker crumbs, cornstarch, baking powder, baking soda, and salt. Fold in white chocolate if using.
- Assemble: Roll cookie dough, place filling, cover with more dough. Bake at 350°F for 10-12 mins.
