Ingredients

Berry Ice Cubes

  • Fresh Blueberries – 1/2 cup
  • Fresh Strawberries (chopped) – 1/2 cup

Strawberry Syrup Puree

  • Fresh or Frozen Strawberries – 1 1/2 cups
  • Water – 1 cup
  • Maple Syrup – 1/4 cup (optional, can substitute with honey or coconut sugar or omit for sugar-free)

Strawberry Sparkler Drink

  • Sparkling Water – 2 cups
  • Lemon Juice – 1 to 2 tablespoons (freshly squeezed)
  • Strawberry Syrup Puree – 1/2 cup

Instructions

  1. Prepare Berry Ice Cubes: Place fresh blueberries and chopped strawberries evenly into ice cube trays, then fill with water. Freeze for at least 4 hours or until fully solidified to create colorful berry ice cubes.
  2. Make Strawberry Syrup Puree: Combine strawberries and water in a blender or food processor and blend until smooth. Pour the mixture into a saucepan and bring to a gentle simmer over medium heat. Stir in maple syrup and cook for 8 to 10 minutes until slightly thickened. Remove from heat and allow to cool completely.
  3. Assemble Strawberry Sparkler Drink: In serving glasses, add a few berry ice cubes. Pour in 1/2 cup of the strawberry syrup puree, add fresh lemon juice, and top off with sparkling water. Stir gently to combine. Serve immediately and enjoy the refreshing sparkle.
