Description

  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 4 oz cream cheese, softened
  • 23 cups cooked shredded chicken
  • 2 cups corn (frozen, canned, or roasted; drained if canned)
  • 1 1/2 cups shredded cheddar or Mexican blend cheese, divided
  • 1/2 cup crumbled cotija cheese (or feta)
  • 1 (4 oz) can diced green chiles
  • 1/4 cup chopped fresh cilantro (optional)
  • 1/2 tsp chili powder
  • 1/2 tsp smoked paprika
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Juice of 1 lime

Instructions

  1. Preheat: Preheat the oven to 375°F.
  2. Mix Ingredients: In a large bowl, combine mayonnaise, sour cream, cream cheese, shredded chicken, corn, 1 cup cheddar cheese, cotija cheese, green chiles, cilantro, chili powder, smoked paprika, garlic powder, salt, pepper, and lime juice.
  3. Transfer to Baking Dish: Transfer the mixture to a baking dish and top with the remaining 1/2 cup cheddar cheese.
  4. Bake: Bake in the preheated oven for about 25-30 minutes until bubbly and golden brown on top.
