- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 4 oz cream cheese, softened
- 2–3 cups cooked shredded chicken
- 2 cups corn (frozen, canned, or roasted; drained if canned)
- 1 1/2 cups shredded cheddar or Mexican blend cheese, divided
- 1/2 cup crumbled cotija cheese (or feta)
- 1 (4 oz) can diced green chiles
- 1/4 cup chopped fresh cilantro (optional)
- 1/2 tsp chili powder
- 1/2 tsp smoked paprika
- 1/2 tsp garlic powder
- Salt and pepper to taste
- Juice of 1 lime
Instructions
- Preheat: Preheat the oven to 375°F.
- Mix Ingredients: In a large bowl, combine mayonnaise, sour cream, cream cheese, shredded chicken, corn, 1 cup cheddar cheese, cotija cheese, green chiles, cilantro, chili powder, smoked paprika, garlic powder, salt, pepper, and lime juice.
- Transfer to Baking Dish: Transfer the mixture to a baking dish and top with the remaining 1/2 cup cheddar cheese.
- Bake: Bake in the preheated oven for about 25-30 minutes until bubbly and golden brown on top.
- Serve: Let it cool slightly before serving. Enjoy!

- This casserole can be served with tortilla chips, over rice, or with a side salad for a complete meal.
- To save time, you can use rotisserie chicken instead of cooking and shredding your own.
