Chicken:
- 4 boneless skinless chicken breasts
- Salt and pepper, to taste
- ½ teaspoon paprika
- 1 tablespoon olive oil
Filling:
- 2 teaspoons olive oil
- 3 cups packed spinach, roughly chopped
- 4 cloves garlic, minced
- 1/3 cup sun-dried tomatoes, drained/chopped
- 4 oz. cream cheese, softened
- 1 cup shredded mozzarella
- 1/3 cup Parmesan, grated
- ½ teaspoon dried basil
- ½ teaspoon dried oregano
- ¼ teaspoon onion powder
- 1 pinch red pepper flakes
Instructions
- Prepare the Filling: In a skillet, heat olive oil and sauté spinach, garlic, and sun-dried tomatoes until wilted. Remove from heat and stir in cream cheese, mozzarella, Parmesan, and seasonings.
- Prepare Chicken: Cut a pocket into each chicken breast. Stuff each with the filling mixture.
- Cook: Season chicken with salt, pepper, and paprika. In a skillet, heat olive oil and sear chicken until golden. Finish cooking in the oven until chicken is cooked through.

- You can customize the filling by adding ingredients like roasted red peppers or artichoke hearts.
