Chicken:

  • 4 boneless skinless chicken breasts
  • Salt and pepper, to taste
  • ½ teaspoon paprika
  • 1 tablespoon olive oil

Filling:

  • 2 teaspoons olive oil
  • 3 cups packed spinach, roughly chopped
  • 4 cloves garlic, minced
  • 1/3 cup sun-dried tomatoes, drained/chopped
  • 4 oz. cream cheese, softened
  • 1 cup shredded mozzarella
  • 1/3 cup Parmesan, grated
  • ½ teaspoon dried basil
  • ½ teaspoon dried oregano
  • ¼ teaspoon onion powder
  • 1 pinch red pepper flakes

Instructions

  1. Prepare the Filling: In a skillet, heat olive oil and sauté spinach, garlic, and sun-dried tomatoes until wilted. Remove from heat and stir in cream cheese, mozzarella, Parmesan, and seasonings.
  2. Prepare Chicken: Cut a pocket into each chicken breast. Stuff each with the filling mixture.
  3. Cook: Season chicken with salt, pepper, and paprika. In a skillet, heat olive oil and sear chicken until golden. Finish cooking in the oven until chicken is cooked through.
