Description

This Sweet Hawaiian Crockpot Chicken recipe delivers tender, flavorful chicken thighs infused with a deliciously sweet and savory sauce featuring pineapple juice, brown sugar, and soy sauce. Slow-cooked to perfection, it’s an easy, hands-off meal ideal for busy days or a comforting dinner with a tropical twist.

Ingredients

Scale

Chicken

  • 2 pounds boneless skinless chicken thighs

Sauce

  • 1 cup pineapple juice
  • 1/2 cup brown sugar
  • 1/3 cup soy sauce
  • 2 cloves garlic, minced
  • 1/4 teaspoon crushed red pepper flakes (optional)

Thickening Slurry

  • 1 tablespoon cornstarch
  • 2 tablespoons water

Instructions

  1. Prepare the Sauce: In a medium bowl, combine pineapple juice, brown sugar, soy sauce, minced garlic, and crushed red pepper flakes if using. Mix until the sugar is dissolved and all ingredients are well incorporated.
  2. Layer the Chicken: Place the boneless skinless chicken thighs at the bottom of the crockpot in an even layer.
  3. Add the Sauce: Pour the prepared sauce evenly over the chicken thighs, ensuring they are well covered.
  4. Cook: Cover the crockpot and cook on low heat for 6 to 7 hours or on high heat for about 3 to 4 hours, until the chicken is tender and cooked through.
  5. Thicken the Sauce: About 30 minutes before serving, mix cornstarch and water in a small bowl to create a slurry. Stir this into the crockpot and cover again. Allow to cook for 20-30 minutes more to thicken the sauce.
  6. Serve: Once the sauce has thickened and the chicken is fully cooked, serve hot over rice or your favorite side dish for a complete meal.

Notes

  • Use chicken thighs for the most tender and flavorful results; chicken breasts can be used but may dry out.
  • Adjust crushed red pepper flakes to your preferred spice level or omit for a milder dish.
  • Serve with steamed white rice or brown rice to soak up the delicious sauce.
  • Leftovers can be refrigerated for up to 4 days and reheated gently on the stovetop or microwave.
  • This dish can also be made in an Instant Pot using the slow cook function or pressure cooking method with adjusted times.
