Wonton Cups

  • 24 wonton wrappers

Beef Filling

  • ½ pound lean ground beef
  • 3 tablespoons water
  • 1½ tablespoons mild taco seasoning

Toppings

  • 1 cup shredded fiesta blend cheese
  • 1 cup shredded lettuce
  • ½ cup guacamole
  • ½ cup sour cream
  • ½ cup pico de gallo

Instructions

  1. Preheat Oven and Prepare Muffin Tin: Preheat the oven to 375°F. Lightly spray a regular-size muffin tin with non-stick cooking spray to prevent sticking.
  2. Form Wonton Cups: Press one wonton wrapper into each muffin tin cup. Then, place a second wrapper overlaying the first, pressing both against the sides and bottom of the muffin cup to form a secure shell. Repeat for all 12 cups.
  3. Bake Wonton Cups: Bake the wonton cups for 8-10 minutes or until golden brown. Note that the tips may turn a deeper golden color than the base.
  4. Cook Ground Beef: While the wonton cups bake, heat a 1½ to 2-quart saucepan or small skillet over medium-high heat. Add the ground beef and stir continuously, breaking it into small pieces until fully cooked with no pink remaining.
  5. Season Meat: Reduce heat to low, then add the taco seasoning and water to the cooked beef. Stir well and let the mixture simmer for a few minutes. Remove from heat.
  6. Assemble Taco Bites: Spoon about 1 tablespoon of the seasoned beef into each baked wonton cup.
  7. Add Cheese Layer: Sprinkle approximately 1 tablespoon of shredded fiesta blend cheese over the beef in each cup.
  8. Add Lettuce: Top the cheese with ½ to 1 tablespoon of shredded lettuce to add freshness and crunch.
  9. Add Guacamole: Spoon 1 to 1½ teaspoons of guacamole on top of the lettuce layer in each cup.
  10. Add Sour Cream: Place a 1 teaspoon dollop of sour cream in the center of the guacamole layer for creaminess.
  11. Add Pico de Gallo: Finally, spoon 1 to 2 teaspoons of pico de gallo on top of the sour cream. Serve immediately to enjoy the crispy texture.
