  • 12 ounce bag frozen corn
  • 14.5 ounce can petite diced tomatoes with green chilies, NOT drained

  • 1 cup sour cream
  • 3 cups Mexican blend cheese

Instructions

  1. Cook the beef mixture: In a large skillet over medium heat, brown 1 pound of lean ground beef with ½ diced yellow onion and 1 teaspoon minced garlic until the beef is fully cooked and onions are translucent. Drain excess fat if necessary.
  2. Add seasoning and veggies: Stir in 1 packet of taco seasoning, the frozen 12-ounce bag of corn, and 14.5 ounces of petite diced tomatoes with green chilies (undrained). If using, add 1 cup of black beans. Mix well and let it simmer for a few minutes to combine the flavors.
  3. Prepare the casserole mixture: Remove the skillet from heat and stir in 1 cup of sour cream until fully incorporated.
  4. Layer the casserole: In a greased baking dish, create the casserole by mixing the beef mixture with 2 cups of finely crushed Doritos and half of the 3 cups of Mexican blend cheese. Spread the mixture evenly.
  5. Add toppings: Sprinkle the remaining 1 cup of loosely crushed Doritos on top followed by the remaining cheese.
  6. Bake: Preheat the oven to 350°F (175°C). Bake the casserole uncovered for 20-25 minutes or until the cheese melts and the casserole is bubbly.
  7. Garnish and serve: Remove from oven and let it cool slightly. Garnish with optional sliced green onions, diced tomatoes, shredded lettuce, avocado, and dollops of sour cream before serving.
