Ingredients
Scale
Meat and Sauces
- 1 lb lean ground beef
- 1 tbsp soy sauce
- 1 tbsp hoisin sauce
Vegetables and Herbs
- 1 cup shredded carrots
- 1/2 cup chopped bell peppers
- Fresh basil leaves (about 20 leaves)
Wraps
- Rice paper wrappers (about 10-12 sheets)
Instructions
- Cook the Beef: In a large skillet over medium heat, cook the lean ground beef, breaking it up with a spoon. Add soy sauce and hoisin sauce, stir well, and cook until the beef is fully browned and sauce is absorbed, about 6-8 minutes.
- Add Vegetables: Stir in the shredded carrots and chopped bell peppers into the skillet. Continue cooking for 3-4 minutes until the vegetables are tender but still crisp, then remove from heat.
- Prepare Rice Paper: Fill a shallow bowl with warm water. Dip one rice paper wrapper into the water for about 10-15 seconds until soft and pliable. Lay it flat on a clean surface.
- Assemble Rolls: Place 2-3 tablespoons of the beef mixture in the center of the softened rice paper. Add a few fresh basil leaves on top. Fold the sides of the wrapper over the filling and tightly roll from one end to the other to form a sealed roll.
- Serve: Arrange the rolls on a serving plate. Serve immediately with your choice of dipping sauces, such as sweet chili or peanut sauce.
Notes
- Use lean ground beef to reduce excess fat and keep rolls light.
- Rice paper sticks quickly once softened, so work one at a time.
- Add other fresh herbs like mint or cilantro for extra flavor variation.
- For a gluten-free version, ensure soy sauce is gluten-free or substitute with tamari.
- Leftover beef mixture can be refrigerated for up to 2 days but is best freshly rolled.
