- ¼ cup creamy peanut butter
- ¼ cup soy sauce
- 2 tablespoons rice vinegar
- 2 tablespoons honey
- 1 tablespoon sriracha (adjust to taste)
- ½ cup coconut milk (or regular milk)
- 1 tablespoon lime juice
- 1 teaspoon sesame oil
Garnish:
- 2 tablespoons chopped peanuts
- 2 tablespoons chopped fresh cilantro
Instructions
- Prepare the Chicken: In a large skillet, heat vegetable oil over medium-high heat. Add chicken and cook until browned on both sides, about 5-6 minutes per side. Remove from skillet and set aside.
- Make the Sauce: In the same skillet, add garlic and ginger. Cook for 1-2 minutes until fragrant. Stir in peanut butter, soy sauce, rice vinegar, honey, sriracha, coconut milk, lime juice, and sesame oil. Bring to a simmer.
- Combine Everything: Add the chicken back to the skillet and coat it with the sauce. Cook for an additional 5-7 minutes until the chicken is cooked through.
