  • 4 boneless, skinless chicken breasts or thighs
  • 2 tablespoons vegetable oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh ginger, minced
  • ¼ cup creamy peanut butter
  • ¼ cup soy sauce
  • 2 tablespoons rice vinegar
  • 2 tablespoons honey
  • 1 tablespoon sriracha (adjust to taste)
  • ½ cup coconut milk (or regular milk)
  • 1 tablespoon lime juice
  • 1 teaspoon sesame oil

Garnish:

  • 2 tablespoons chopped peanuts
  • 2 tablespoons chopped fresh cilantro

Instructions

  1. Prepare the Chicken: In a large skillet, heat vegetable oil over medium-high heat. Add chicken and cook until browned on both sides, about 5-6 minutes per side. Remove from skillet and set aside.
