Salad:
- 200 g rice noodles
- 1 cucumber, julienned
- 2 carrots, julienned
- 1 red bell pepper, thinly sliced
- 1 yellow bell pepper, thinly sliced
- 100 g bean sprouts
- 1 bunch fresh coriander, chopped
- 1 bunch fresh mint, chopped
- 100 g roasted peanuts, crushed
- 2 green onions, thinly sliced
For the dressing:
- 3 tablespoons soy sauce
- 2 tablespoons lime juice
- 1 tablespoon honey
- 1 tablespoon sesame oil
- 1 teaspoon chili paste (optional)
Instructions
- Cook the rice noodles according to package instructions. Drain and rinse with cold water. Set aside.
- In a large bowl, combine the cooked noodles, cucumber, carrots, bell peppers, bean sprouts, coriander, mint, peanuts, and green onions.
- In a small bowl, whisk together the soy sauce, lime juice, honey, sesame oil, and chili paste to make the dressing.
- Pour the dressing over the salad and toss to combine. Serve chilled and enjoy!
