Salad:

  • 200 g rice noodles
  • 1 cucumber, julienned
  • 2 carrots, julienned
  • 1 red bell pepper, thinly sliced
  • 1 yellow bell pepper, thinly sliced
  • 100 g bean sprouts
  • 1 bunch fresh coriander, chopped
  • 1 bunch fresh mint, chopped
  • 100 g roasted peanuts, crushed
  • 2 green onions, thinly sliced

For the dressing:

  • 3 tablespoons soy sauce
  • 2 tablespoons lime juice
  • 1 tablespoon honey
  • 1 tablespoon sesame oil
  • 1 teaspoon chili paste (optional)

Instructions

  1. Cook the rice noodles according to package instructions. Drain and rinse with cold water. Set aside.
  2. In a large bowl, combine the cooked noodles, cucumber, carrots, bell peppers, bean sprouts, coriander, mint, peanuts, and green onions.
  3. In a small bowl, whisk together the soy sauce, lime juice, honey, sesame oil, and chili paste to make the dressing.
