Description

A flavorful and colorful 7-layer festive dip perfect for parties and gatherings, combining layers of refried beans, creamy guacamole, sour cream seasoned with taco spices, chunky salsa, crisp lettuce, shredded cheese, olives, tomatoes, and green onions for a crowd-pleasing appetizer.

Ingredients

Scale

Beans Layer

  • 32 ounces (2 16-ounce cans) canned refried beans (Old El Paso brand)
  • 3 tablespoons water

Guacamole Layer

  • 1½ cups premade mild guacamole (Walmart brand – Freshness Guaranteed)

Sour Cream Layer

  • 2 cups sour cream
  • 1 ounce packet mild taco seasoning (Great Value brand)

Salsa Layer

  • 16 ounces container chunky mild salsa (Pace brand), drained through a mesh strainer

Fresh Vegetables and Cheese Layers

  • 2 cups shredded lettuce
  • 2 cups pre-shredded fiesta blend cheese (Great Value brand)
  • 2.25 ounces sliced black olives (Mario brand), well drained
  • 1 cup chopped roma tomatoes
  • ½ cup thinly sliced green onions

Instructions

  1. Prepare the Beans Layer: In a medium bowl, combine the canned refried beans and 3 tablespoons of water. Stir until smooth and slightly thinned. Spread this mixture evenly on the bottom of a large serving dish or shallow casserole dish.
  2. Spread the Guacamole: Carefully layer 1½ cups of premade mild guacamole over the beans layer, spreading evenly to cover.
  3. Mix and Add Sour Cream: In a separate bowl, mix the 2 cups of sour cream with the 1-ounce packet of mild taco seasoning until well combined. Spread this mixture evenly over the guacamole layer.
  4. Drain and Add Salsa: Drain the 16-ounce container of chunky mild salsa through a mesh strainer to remove excess liquid. Spread the drained salsa evenly over the sour cream layer.
  5. Add the Lettuce Layer: Evenly layer 2 cups of shredded lettuce on top of the salsa.
  6. Add Cheese, Olives, Tomatoes, and Green Onions: Sprinkle 2 cups of pre-shredded fiesta blend cheese evenly over the lettuce. Then add 2.25 ounces of well-drained sliced black olives, 1 cup of chopped roma tomatoes, and finally ½ cup of thinly sliced green onions as the final topping.
  7. Chill Before Serving: Cover the dish with plastic wrap and refrigerate for at least 1 hour before serving to allow the flavors to meld and the dip to firm up for easy scooping.

Notes

  • You can substitute the premade guacamole with fresh homemade guacamole if preferred for fresher flavor.
  • Adjust the taco seasoning amount in the sour cream to taste depending on desired spice level.
  • Drain the salsa well to prevent the dip from becoming watery.
  • This dip can be made up to a day ahead; keep it covered and refrigerated.
  • Serve with tortilla chips, pita chips, or vegetable sticks for dipping.
