For the Pasta:

  • 8 oz linguine
  • Salted water, for boiling
  • ¼ cup reserved pasta water

For the Cowboy Butter Sauce:

  • ½ cup (1 stick) unsalted butter, softened
  • 2 garlic cloves, minced
  • ¼ cup chicken broth
  • ¼ cup heavy cream
  • ¼ cup grated Parmesan cheese
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 2 tbsp fresh parsley, chopped
  • ½ tsp crushed red pepper flakes (optional)

Instructions

  1. Cook the Chicken: In a skillet, cook chicken in olive oil and butter until browned. Season with garlic powder, onion powder, smoked paprika, cayenne, salt, and pepper.
  2. Cook the Pasta: Boil linguine in salted water until al dente. Reserve ¼ cup of pasta water.
  3. Make the Sauce: In the same skillet, melt butter and sauté garlic. Add chicken broth, cream, Parmesan, mustard, lemon juice, parsley, and red pepper flakes.
  4. Combine: Toss cooked linguine in the sauce, adding reserved pasta water as needed. Serve with chicken on top.

Notes
