- ⅓ cup vegan chocolate chips, plus more for topping
- ¼ cup walnuts, chopped
Instructions
- Preheat the oven: Preheat the oven to 350°F (180°C) and line a loaf pan with parchment paper.
- Mix wet ingredients: In a large bowl, mash the bananas and mix in coconut sugar, maple syrup, non-dairy milk, vanilla extract, apple cider vinegar, and melted coconut oil.
- Combine dry ingredients: In a separate bowl, whisk together oat flour, baking powder, baking soda, cinnamon, nutmeg, and salt.
- Combine wet and dry: Gradually add the dry ingredients to the wet mixture, stirring until well combined. Fold in chocolate chips and walnuts.
- Bake: Pour the batter into the prepared pan, sprinkle extra chocolate chips on top, and bake for about 50-60 minutes or until a toothpick inserted in the center comes out clean.
- Cool and serve: Allow the banana bread to cool in the pan for 10 minutes before transferring to a wire rack to cool completely. Slice and enjoy!
