- 1 tightly packed cup (200g) brown sugar
- 1/2 cup (100g) caster sugar / superfine sugar
- 1 large egg
- 1 yolk from a large egg
- 1 tsp vanilla extract
Choc chips:
- 1 1/2 cups (250g) dark chocolate chips / semi-sweet choc chips
- 3/4 cup (150g) milk chocolate chips
Instructions
- Prepare the dry ingredients: Combine flour, cornflour, baking powder, baking soda, and salt in a bowl.
- Prepare the wet ingredients: Cream butter, brown sugar, and caster sugar until light and fluffy. Add egg, egg yolk, and vanilla extract.
- Combine the wet and dry ingredients: Gradually add the dry ingredients to the wet mixture. Fold in chocolate chips.
- Bake the cookies: Scoop dough onto baking sheets, top with extra chocolate chips, and bake until golden brown.
