Ingredients
Scale
Caramel Layer
- 12 ounces caramel squares (approximately 42 squares)
- 2 tablespoons whipping cream (divided, if needed)
Chocolate Layer
- 2 cups semi-sweet chocolate chips (12 ounces)
- 14-ounce can sweetened condensed milk
- ½ tablespoon vanilla extract
- pinch of salt
Nuts
- 1 cup pecans, chopped into bits
- Additional pecans for topping (optional)
Instructions
- Prepare the Caramel Layer: In a microwave-safe bowl, combine the caramel squares with 1 tablespoon of whipping cream. Microwave in 30-second intervals, stirring between each, until smooth and creamy. If the caramel mixture is too thick, add the remaining tablespoon of cream to achieve a spreadable consistency.
- Make the Chocolate Fudge Mixture: In a separate microwave-safe bowl, mix the semi-sweet chocolate chips with the sweetened condensed milk, vanilla extract, and a pinch of salt. Microwave in 30-second bursts, stirring well after each, until the chocolate is fully melted and the mixture is smooth.
- Add Pecans to Chocolate Mixture: Stir the chopped pecans into the warm chocolate fudge mixture until evenly distributed.
- Assemble the Fudge: Line a square baking pan (8×8 or 9×9 inches) with parchment paper for easy removal. Spread the caramel layer evenly at the bottom of the pan. Carefully pour and spread the chocolate fudge mixture on top of the caramel layer. Sprinkle additional chopped pecans over the top if desired.
- Chill and Set: Refrigerate the assembled fudge for at least 2 hours or until firm and set.
- Serve: Once firm, lift the fudge out of the pan using the parchment paper and cut into squares. Serve chilled or at room temperature.
Notes
- Use a glass or ceramic bowl for microwaving to prevent burning the caramel and chocolate mixtures.
- Be careful while heating the caramel and chocolate mixtures; stirring frequently prevents scorching.
- For a creamier caramel, adjust the whipping cream quantity slightly as needed.
- Store the fudge in an airtight container in the refrigerator for up to two weeks.
- For a festive touch, consider drizzling melted white chocolate over the top or adding sea salt flakes.
