  • 15 ounce (1 3/4 cups) part-skim ricotta cheese
  • 1 large egg
  • 1 cup shredded mozzarella, divided
  • 1/2 cup freshly grated Parmesan cheese
  • 10 ounce package frozen spinach, thawed and squeezed dry
  • 2 cloves garlic, minced
  • 1/2 teaspoon dried Italian seasoning
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon ground nutmeg

Instructions

  1. Cook the Lasagna Noodles: Boil the noodles according to package instructions, then drain and lay them out on a flat surface.
  2. Make the Filling: In a bowl, mix ricotta, egg, 1/2 cup mozzarella, Parmesan, spinach, garlic, Italian seasoning, salt, pepper, and nutmeg.
