Ingredients
Scale
Chocolate Ganache
- 12 ounces milk chocolate, finely chopped
- ⅓ cup heavy whipping cream
- ¾ teaspoon almond extract
Coating and Garnish
- 16 ounces white chocolate, melted
- ⅓ cup almonds, chopped
- ¼ cup red and green candy melts
Instructions
- Prepare the Ganache: Combine chopped milk chocolate and heavy whipping cream in a heatproof bowl. Place over a double boiler or gently heat in the microwave in 20-second increments, stirring frequently, until fully melted and smooth. Stir in the almond extract until well incorporated.
- Chill the Mixture: Cover the ganache with plastic wrap and refrigerate for at least 2 hours, or until firm enough to shape.
- Shape the Truffles: Using a small spoon or melon baller, scoop out small portions of the chilled ganache and roll them between your palms to form smooth, even balls. Place them on a parchment-lined baking sheet.
- Coat with White Chocolate: Dip each truffle into the melted white chocolate, using a fork or dipping tool to coat evenly. Allow excess to drip off, then place back on the parchment paper.
- Decorate: Before the white chocolate sets, sprinkle chopped almonds on top of some truffles and quickly add red and green candy melts to others to create festive patterns.
- Set and Serve: Allow the truffles to set completely at room temperature or refrigerate for quicker setting. Once firm, store them in an airtight container in the refrigerator until ready to enjoy.
Notes
- Use high-quality chocolate for the best flavor and smooth texture.
- If white chocolate thickens too much, gently reheat it until it is smooth before dipping.
- For a stronger almond flavor, you can toast the chopped almonds lightly before sprinkling.
- Store truffles refrigerated; bring to room temperature before serving for optimal taste and texture.
- These truffles make excellent homemade holiday gifts; package them in festive boxes or tins.
