Instructions
- Prepare Zucchini: Grate zucchini and toss with 1 tsp salt. Let sit for 10 minutes, then squeeze out excess liquid.
- Mix Batter: In a bowl, combine zucchini, eggs, green onions, flour, baking powder, remaining salt, and pepper.
- Cook Fritters: Heat oil in a pan, drop spoonfuls of batter, and cook until golden brown on both sides.
- Serve: Serve hot with sour cream on the side.
